Raphael's upbringing as Buddhist early on familiarized him with a deep-rooted respect for the elements and the powers that nature offers us. His focus on fusing healthy elements into traditional cuisine is Chef Raphael's signature. He refined his vast knowledge after being invited by Asia's most respected Traditional Chinese Medicine research Pharmacy Eu Yan Sang to participate in training and successful development of a world's first TCM fusion French restaurant in Singapore.  

Chef Raphael is the first chef to purposely fuse the elegance and taste of French cuisine with the 4000 year old eating secrets of Traditional Chinese Medicine (TCM) into delicious menus of easy to prepare dishes; perfectly timed with a worldwide attention to Chinese cultures and healthy awareness! His combination is quoted in Appetite Magazine, "...is made in Culinary Heaven."

Time Magazine reported, "Diners consume and wash down Gamon's remarkable menu with a range of unusual health drinks, from vinegar on the rocks (surprisingly addictive) to spinach juice (delicious to the last drop). People ask him – does it taste good and he replies, "… they love it!"
