VEGETABLE CURRY with OREGANOYANG - Lung activating, Liver disinfecting, aids digestion, boosts immune response

RECIPE AND GUIDANCE (4 People)
|1 tablespoon olive oil||Vegetable Oil|
|1 onions chopped||Shallot or green Onions|
|2 Carrots wild (Daucus) sliced||Yellow Beet or Carrots|
|3 toes Garlic, minced|
|1 Bell-pepper red sliced||Bell-pepper green|
|½ China cabbage sliced||Cabbage white|
|¼ Celery stem sliced||Celery root|
|1 Chili diced|
|100g Mushroom halved||Mushrooms dried or variations|
|2 Tomatoes whole, chopped|
|1 fresh Lemongrass||Lemongrass powder or Lemon pepper|
|1 tbs Cumin ground||Coriander fresh or dried|
| 1 sprig Oregano whole
Basil fresh (whole bundle)
|Oregano oil or Sage fresh
Cilantro or Italian Parsley to decorate
|2 dl Coconut milk|
*Curry is not a spice it is a mix. The color is distinguished by either the Turmeric or the color of the chili. What in India is “Curry” might be similar to Chili past in Asia.
In a hot wok or skillet roast the veggies without the spices for a few minutes. Add the coconut milk and spices (hold some Basil) & simmer (covered) for five minutes. Decorate with Cilantro or Basil and serve with rice. Store this dish in the fridge for two days and reheat as needed.
HISTORY AND BENEFIT
Since ancient times, oregano has been used to benefit humanity. Its first recorded use was by the Assyrians back in 3000 B.C. Greek and Romans have used it for centuries. Despite its history, the western world has never used it for its powers until recently. The ancients obviously used it as a seasoning, but also used the entire stalk and roots to create oil for medicine to ward off infection and disease. In the western world, we prescribe antibiotics at the slightest inkling of infection and disease. Over the years, people have spent enormous amounts of money, and time on these antibiotics to help our maladies. We have used them so much that there are now drug resistant microbes which modern medicine cannot cure. Drug resistance is not the only problem. Some people have allergies to antibiotics, causing deadly reactions. Drug toxicity is another deadly problem.
The culinary herbs oregano, sage, mint, thyme, lemon balm, clove, allspice and cinnamon all contain very high concentrations of antioxidants and herbs intake may contribute significantly to the intake total plant antioxidants and may be a better food source antioxidants than many other food groups like fruits, berries, cereals and vegetables.
Furthermore, oregano oil is an effective anti fungal remedy and suggested to dispel intestinal parasites and yeast infection.
